  1. You need 4 eggs
  2. Take 2 potatoes
  3. Use 3 sausages (I used chicken)
  4. Provide 1 tbsp extra virgin olive oil
  5. Prepare salt
  6. You need 1 tsp chili powder
  7. Use 1 tbsp ground black pepper
  8. Get water
  9. Take 1/2 cup shredded mozzarella cheese
  10. Use 1/4 cup bread crumbs
  11. Use 2 clove garlic
Steps to make Potato Sausage Egg Bake:
  1. In a pan, heat up the olive oil. Peel and dice the potatoes into cubes. Finely chop garlic. Add these to the oil. Add salt, chili powder and black pepper. Stir.
  2. Add a small amount of water and stir. Put a lid on and cook till water is gone and potatoes are cooked through.
  3. Dice the sausage the same way you diced the potatoes. Small cubes. Add it to the pan with the potatoes. Add in a tiny splash of water.
  4. Cook till sausages and potatoes take on a brown colour and become a bit crispy.
  5. In another bowl, whisk the eggs, a pinch of salt, some black pepper. Add in some spices if you wish to.
  6. In a baking tray (I used silicone) grease it and lay the potato mixture on it, spreading it out.
  7. Pour the egg mixture over the potatoes. Sprinkle breadcrumbs and cheese on top.
  8. Bake in a preheated oven, at 190°F Celsius till eggs are cooked and cheese is melted and slightly browned. I cooked it for 30 mins.
  9. Cut and enjoy!!
