The ingredients needed to cook Carribean rice:
  1. You need 3 cups rice
  2. You need 2 kg chicken laps
  3. Provide 1 cup sliced red bell pepper (optional)
  4. Prepare 1 cup sliced carrots
  5. You need 3 cups fried ripe plantain(cut in cubes)
  6. You need 1 cup sliced onions
  7. Prepare 1 tablespoon browning
  8. Provide 3 cubes maggi(knorr chicken)
  9. Get 1 cup sliced green bell pepper
  10. Use 1 tsp dry pepper(ground)
  11. Use 1 satchet kitchen glory spice(chicken seasoning)
  12. Get 150 ml vegetable oil
  13. Get 400 g beef cube(cow meat chopped finely)
  14. You need 1 tsp curry
  15. Prepare 1 tsp thyme
  16. Prepare to taste salt
Instructions to make Carribean rice:
  1. Boil the chicken with the usual ingredients ( 2 maggi cubes,1 tsp curry and thyme, 1 satchet kitchen glory,1tsp of salt and half cup of sliced onions
  2. Once the chicken is properly cooked,don't allow the stock(meat water) to dry
  3. Also,parboil the beef cubes in a small pot with a cube of Maggi and a pinch of salt.Add 1 cup of water and allow to cook until very soft.separate the beef from the stock and set aside
  4. Slice the carrots,plantain,green pepper,onions and beef(if not done already). fry the plantain and set aside
  5. Pour boiled water on 3 cups of rice and allow to stay for 3mins.wash and cook until its 75% done.don't overcook it or the food won't turn out well.Add 1 spoon of browning to the rice, stir evenly until properly mix and then set aside
  6. Add both chicken and beef stock together,it should not be more than a cup
  7. Set your cooking pot on heat and add 10ml of vegetable oil.allow to heat for a minute before adding beef cubes.fry the beef cubes for 3-5 mins until it darken(golden brown)
  8. Remove the beef cubes and pour in the remaining onions.stir and add the chopped green pepper, red bell pepper and carrot
  9. Add the chicken and beef stock, a tsp of salt,a cube of knorr and a tsp of ground pepper.stir all together and allow a minute to fry lightly.
  10. Pour in the colored rice(brownish because of the browning added previously),turn evenly and taste for salt.you can add another knorr cube if the taste is not good enough
  11. Once it's taste is okay,add the fried beef cubes and plantain cubes stir until its properly mixed.cover pot and allow to simmer on low heat for 3- 5 mins
  12. Serve with fried or grilled chicken
