  4. Take 1 tbsp rice vinegar

  6. Get 1/4 cup finely sliced spring onions
  7. Get 1 handful mange touts, blanched
  8. You need 400 g cooked ramen noodles
  9. Prepare 2 soft poached eggs
  10. Use Tare :
  11. Prepare 1/2 cup soy sauce
  12. Use 1/2 cup mirin
  13. Provide 1/4 cup sake (1 tbsp rice wine vinegar mixed with 3 tbsp water as substituted)
  14. Use 1/2 cup brown sugar
  15. You need 4 garlic cloves, roughly chopped
  16. Get 3 spring onions, root end trimmed
  17. Use 4 cm piece ginger, sliced
Steps to make Beef & Egg ‘Mazemen’ Noodles:
  1. Mix the beef with mirin, miso, honey and rice vinegar. Set aside while you make the tare.
  2. For the tare, place the ingredients in a saucepan over medium-high heat. Bring to a boil, then reduce heat to medium and simmer until the sauce has reduced by half. The. Strain and set aside until ready to serve.
  3. Heat the vegetable oil in frying pan or wok. Stir fry the marinated beef for 4-5 minutes or until cooked. Toss through most of the spring onions (save some for serving).
  4. To serve, add 1/4 cup of tare to the bottom of your serving bowls. Divide the noodles among the bowls. Top with the beef, an egg and mange touts on the side and drizzle with more tare. Serve immediately and don’t forget to give everything a good mix before you tuck in (the noodles will turn sticky if you leave them for too long without mixing everything together quickly)
