  1. Provide 1 cup Wheat Flour
  2. Take 1/2 cup Washed & chopped Plak Leaves
  3. Use 1/2 cup Washed & chopped Methi Leaves
  4. Provide 7-8 Curry Leaves
  5. Use 1/2 tsp Ajwain
  6. Prepare 2 Green Chillies
  7. You need to taste Salt
  8. Prepare 1/4 tsp Red Chilli Pd
  9. Get 2 tbsp Milk
  10. Use Oil for Frying
Steps to make Palak, Methi & Curry Leaves puri (Green Puri):
  1. Wash curry Leaves
  2. In a mixer puree palak, methi, curry leaves & green chillies together. Transfer to the bowl and keep aside.
  3. Combine wheat flour, green puree,salt, red chilli pd. milk & ajwain in another wide mixing bowl. Knead to make a thick dough. Cover it and keep aside for 20 mins.
  4. Heat oil in a deep frying pan/kadai over the med. heat.
  5. Meanwhile divide the dough into small equal sized balls.
  6. Now take a oil test, add a pinch of dough if it touches the bottom and comes back on the surface of oil then its perfect for frying the puris.
  7. T ake a small ball and dip it in oil & flatten it into a small disc with the help of rolling pin.
  8. Put that disc into the hot oil and wait it to puff up & flip it on the other side to cook till it turns golden brown. Now drain the excess oil from the puri & transfer it on the kitchen towel.
  9. Continue the deep frying process for the other balls too.
  10. Serve hot puri with curd, pickle, or alloo curry.
