  1. You need 500 gm Diced Chicken Breast
  2. Prepare 100 gm Red Lentils (Soaked 2hrs)
  3. Get 3 cloves garlic (finely chopped)
  4. You need 1 Birdseye Chilli (finely chopped)
  5. Use 1 thumbsize piece of Ginger (finely chopped)
  6. Get 1 tsp Cumin, Coriander, Cumin, Tumeric
  7. Use 2 tsp Garam Masala
  8. Provide 2 Bay Leaves
  9. Get 1 (400 gm) tin chopped Tomatoes
  10. You need 1 Red Onion (roughly chopped)
  11. Prepare 2 large handfuls of Spinach
  12. Prepare 1 Handful chopped Coriander
  13. Use Juice & Zest of 1 Lime
  14. Use 3 tbsp Natural Yoghurt
  15. Prepare 2 tsp coconut oil
  16. Take S&P (season)

  1. Season the chicken & brown in a hot pan for 3 minutes with 1 tsp of the coconut oil & then set aside
  2. Turn to a medium heat & cook the onion in the remaining oil for 5 mins till soft. Add Garlic, Chilli, Ginger & spices & cook for 2 mins
  3. Increase the heat & add the tomatoes & 1 can of water. Bring to the boil & add the lentils.
  4. Simmer for 30 mins then add the chicken & cook for 5 mins. Add spinach & cook for a further 5 mins.
  5. Add 3 tbsp of natural yogurt to a bowl & add the lime & Coriander. Mix well. Season the Curry & serve
