The ingredients needed to cook Dudhi Muthia Recipe | How To Make Lauki Muthia:
Use 2 cups Whole wheat flour
Take 1 cup Gram flour (besan or chickpea flour)
Prepare 2 cups Grated bottle gourd (lauki or dudhi)
Provide half cup Fenugreek leaves (optional)
Get 2-3 tbsp Sesame oil
Prepare 1 tsp Green chilli paste
You need 1 tsp Ginger paste
Get 1 tsp Garlic paste
You need 1/2 tsp Turmeric powder
Use 1 tsp Red chilli powder
Provide 2 tsp Coriander powder
Take to taste Salt
Take 1 tbsp Sugar (optional)
Provide 2-3 tbsp curd
Use 1/2 tsp Soda by carb
Get For Tempering:
Provide 1 tsp Mustard seeds
Use 1 tsp Cumin seeds
Take pinch Asafoetida
Get pinch Turmeric powder
You need 1 tbsp Sesame seeds
Provide Few Curry leaves
Get 1 tbsp Coriander leaves for garnishing
Instructions to make Dudhi Muthia Recipe | How To Make Lauki Muthia:
Take wheat flour and gram flour into mixing bowl. Add garlic, ginger and green chilli paste. Add oil, and all spices like turmeric powder, red chilli powder, coriander powder, salt and sugar. - Now mix all dry ingredients first. Then add grated bottle gourd, fenugreek(methi) leaves and curd. Mix it well by hand.
Make dough like mixture, If needed add more curd to bind them well. Do not use water. - It looks sticky, so grease your hands with some oil, and make long cylindrical rolls from it. Put them into steamer.
First 5 minutes, steam them at very high flame, them reduce the flame at law, and steam them for 15-20 minutes. - Remove from gas, and let it set for 5 minutes, then transfer steamed rolls into plate and cut then into slices. - You can serve this steamed muthia as it is. It is good snack with tea or for even breakfast.
Make more tempting, let's have tadka for it. heat some 2-3 tbsp oil into pan. Add mustard seeds, cumin seeds, a pinch of asafoetida (hing) and a pinch of turmeric powder. then add some curry leaves and sesame seeds, and add all sliced muthia into it. stir them well. and cook for 5 minutes at low flame. They are ready to serve
