The ingredients needed to prepare Kerala Sambhar:
  1. Take 1/3 rd Toor Daal
  2. Provide 1 Lemon sized Tamarind ball
  3. Get 2 cups cubed Vegetable (White pumpkin, yellow Cucumber, brinjal, carrots, lady's finger etc)
  4. Use 4-5 Drumstick pieces cut lengthwise
  5. Use 1 chopped Tomato
  6. Prepare 1 Green Chillies slit (optional)
  7. Use 1/2 tsp+1/4 tsp Turmeric
  8. Take to taste Salt
  9. You need 3 tbsp chopped Coriander leaves
  10. Use For Masala:
  11. You need 1/3 cup grated Coconut
  12. Use 2 tsp Urad Dal
  13. Take 2 tbsp Coconut oil
  14. Use 4-5 dry Red Chillies
  15. Take 1/4 tsp Fenugreek Seeds
  16. Prepare 3 tablespoon Coriander seeds
  17. Get 1 tbsp Chana Dal
  18. Use 4 Shallots or 1/2 onions chopped
  19. Prepare 2 sprigs Curry Leaves
  20. Use For Seasoning:
  21. Get 2 tsp Coconut oil
  22. You need 1/4 tsp Hing
  23. Take 1 sprig Curry Leaves
  24. Use 2 dry red chillies
  25. Provide 1 tsp Mustard Seeds
Instructions to make Kerala Sambhar:
  1. Soak tamarind in warm water for 45 minutes
  2. Clean toor dal. discard the water
  3. In pressure cooker, add dal, turmeric and water. pressure cook until done
  4. Mash dal. keep it aside
  5. Heat oil in a pan, add dals and fenugreek seeds. saute until brown
  6. Add coriander seeds, dry red chillies, shallots/onion and curry leaves. mix
  7. Add coconut and saute until golden brown
  8. Allow to cool completely
  9. Pressure cook vegetables for 1 whistle with little water and 1/4 tsp turmeric
  10. Grind cooled mixture with water to smooth paste
  11. Add dal, tamarind water, ground paste, tomatoes, salt, bhendi to cooked vegetables
  12. Bring to boil, simmer and cook for 15-20 minutes
  13. Heat oil in a small pan. add hing and splutter mustard seeds
  14. Add dry red chillies and curry leaves. saute for 2-3 seconds.
  15. Add coriander leaves seasoning to sambhar. mix well.
  16. Serve hot with rice/idli/dosas etc
