Use 750 gm Mutton (prefer shoulder)
Use 2 Onions sliced

Prepare leaves Few curry
Get 2 tbsp Tamarind paste
Provide 1 cup Thick Coconut milk
You need 1 tsp Zeera whole
Provide 1 tsp curry masala powder to be grounded
Get 100 grms Cashew
Take 50 grms Roasted Peanuts
You need 100 grms Roasted chana dal(putane ke dal)
You need 50 grms Sesame seeds
Get 2 Cloves
Prepare 1/2 tsp Fennel seeds
Take 3-4 Black pepper
You need 1" Cinnamon stick
Prepare 4-5 Star anise
Prepare 3 Red chillies dry
Provide 1/2 tsp Dry ginger
Instructions to make Kaari Chawal:
First make the Kaari masala.
Dry roast all the whole spices. Roast the peanuts, sesame seeds and chana dal too
In a mixer all all the Curry masala ingridents and grind to a fine powder
Take the mutton pcs add the ginger garlic paste salt and pepper, onion and tomatoes and other dry spices and boil the mutton till 6 vessels
Take oil in a big pot and add the zeera
Add the red chilli powder
Add 250 grms of the Curry masala prepared
Fry the masala till it turns golden and nice aromas spreads
In the masala add the mutton stock along with the pcs
Add 2 tbsp tamarind paste
Add coconut milk
Let the curry simmer for 30 to 45 mins
