The ingredients needed to make Mixed Vegetable Curry:
  1. Provide 1/2 cup boiled broccoli
  2. Take 1 cup boiled green peas
  3. Provide 1 cup boiled cauliflower florets
  4. Use 1 cup paneer
  5. You need 4 blanched and peeled tomatoes
  6. You need 2 finely chopped onions
  7. Prepare 1 tbsp finely chopped capsicum
  8. Take 2 tbsp coriander leaves
  9. Provide 1 tsp mint leaves
  10. Take 1 green chilli
  11. Get 1/4 tsp mustard seeds
  12. Use 1 tbsp oil
  13. Get 1/4 tsp turmeric powder
  14. Use 1/4 tsp chilli powder
  15. Use 1 tsp coriander and jeera powder
  16. Provide as needed water
  17. Take 2 tsp corn flour
  18. You need to taste salt
Steps to make Mixed Vegetable Curry:
    1. Heat the oil in a deep pan. Add the mustard seeds. When they splutter, add the onions, capsicum and turmeric and saute till the onions become light brown in colour.
    1. Then add the blanched and peeled tomatoes and cook for two minutes.
    1. Transfer into a mixer and add cornflour, coriander, mint leaves and green chilli and grind to a fine paste.
    1. Put this back into the deep pan and add chilli powder, coriander-cumin powder, salt, paneer and all the boiled vegetables.
    1. Cook for 5-7 minutes
