The ingredients needed to make Sweet Potato Curry:
  1. You need 2 large sweet potatoes
  2. Get 1 large onion
  3. Use 400 g green lentils
  4. You need 2-3 tbsp crunchy peanut butter
  5. Provide 400 ml coconut milk
  6. Take 2 tsp ginger
  7. Get 2 tsp garlic
  8. Provide 2 tsp tomato and chili purée
  9. You need 1 tsp cayenne pepper
  10. Provide 1 tsp smoky paprika
  11. Take 1 tsp ground cumin
  12. Use 1 tsp ground coriander
  13. Use 3 tbsp soy sauce
  14. You need 1 lime
  15. You need Rice
  16. Get Salt and pepper
  17. You need Vegetable oil
Instructions to make Sweet Potato Curry:
  1. Peel and cut the sweet potatoes into small cubes. Place on a roasting dish and sprinkle salt, pepper, cayenne pepper and vegetable oil on top. Mix around thoroughly. Place in oven at 200 C for about 30 mins (turn once or twice)
  2. Finely dice the onion. Pour one or two teaspoons of vegetable oil in a large pot on a medium heat, and cook the onions stirring continuously. Add the spices (cumin, coriander, paprika) to the mix after 5 mins. Turn the heat down slightly, add the garlic, ginger, peanut butter and purées to the mix and work and stir for another 5-10 mins.
  3. Start cooking the rice.
  4. Pour the coconut milk into the onion mixture, and let simmer. In the meantime, the sweet potatoes should be cooked. Mash these lightly with a fork to break them down and move the sweet potatoes into the onion pot. Also add the lentils, lime juice and the soy sauce and let simmer while the rice is cooking.
  5. Plate up the rice and the curry, season to taste and serve – I love this with natural yoghurt and fresh coriander on top too!
