Take For boiling rice:
Get 6 litre water
You need 1 1/2 kg biryani rice
Prepare 3 cardamoms
Provide 4 cloves
Use 1 medium sized cinnamon

Take 10-15 garlic paste
Provide 1 large sized ginger paste
Get 6-8 green chillies paste
Provide 1 kg onions sliced
Provide 3-4 tomato chopped
Get 1/4 cup coriander leaves chopped
Take 1/4 cup pudina chopped
Get 2 strips curry leaves chopped(optional)
Prepare 1 tbsp turmeric powder
Get 2 tbsp blackpepper powder
You need to taste Salt
Take For decoration
You need 10 cashewnuts fried
Take 15 raisins fried
Provide 1 onion fried
You need 1/4 cup coriander leaves chopped
You need 1/4 cup pudina chopped
Use For frying chicken:
Take 3 kg chicken cut into medium size
Use 1/2 litre coconut oil
Provide 2 tsp red chilli powder
Use 1 tsp turmeric powder
Prepare 11/2 tsp salt
Prepare 1 pinch red food colour
Prepare 3 tsp curd
You need 1 tsp ginger garlic paste
Get For dum:
Take 4-5 tbsp garam masala powder
Prepare 100 g ghee (RKG)
Steps to make Chicken dum biriyani:
In a Bowl add turmeric powder,red chilli Powder,salt,curd,ginger garlic paste and food colour,then mix it add the chicken pieces and again mix it.Keep it aside for 30 mins.
Heat a big pan or kadhai.Add the coconut oil. Fry the cashews and raisins.Keep aside then fry the onion. Keep aside.Fry the chicken also.
Heat 2 tbsp or more oil on a pan. Add the sliced onion and let it get golden Brown,then add the ginger garlic paste and the chilli paste.Saute them for few minutes then add tomatoes.Reduce the flame and cover the pan.When the tomatoes are fully cooked add turmeric and black pepper powder.Saute them till the raw smell goes.Finally add the chopped leaves.Switch off the flame and add the fried chicken to it.
In a big pan add the water for boiling.When it getting to boil add the cardamom cinnamon and cloves.Add the lemon juice and salt,then add rice(rice soak in water for 30 mins and wash and drain it). When it cooked(don't over cook it we want to do dum also)strain it in a strainer.
We want to start our final process at this time.
Take a clean big pot and add some RKG,then add some cooked rice and make it a layer on top of the rice pour the RKG again and sprinkle 1 tbsp gram masala powder.On top of it add the half of the chicken masala then again add some cooked rice make it as a layer repeat the same process mentioned above finally we want rice on the top.Add the remaining RKG and gram masala powder.Sprinkle the fried onions cashews and raisins. Decorate it with the leaves.Close it and dum it for 30 minutes.
Serve it hot with Raita and lime pickle.
