  2. Prepare 1/4 cup Split Pigeon Peas (Toor Dal)

  5. Provide 1 1/2 cup Seasonal Vegetables (Green Peas, Carrots, Brinjal)

Instructions to make Bhogi ki Khichdi/ Mix Vegetable Khichdi:
  1. Wash Rice, both dal together. And let it remain soaked for 15-20 mins.
  2. Crush garlic and ginger together. Finely chopped onion, groundnuts and chop potatoes (keep skin intact), Tomato and all other vegetables in bite size pieces.
  3. Heat oil and 1/2 tbsp ghee. Add Cumin seed, crushed Ginger Garlic, roughly chopped Curry leaves, and hing. And let it get fry for few seconds.
  4. Later add chopped onion, chopped vegetables and potatoes and mix it and let it cook till all vegetables looks translucent.
  5. Add red chilli powder, turmeric, garam masala and give a nice mix.
  6. Now it's time to add rice mixture. Strain out all water first. Add and mix it with masala and vegetable mixture. Saute it for 1 minute.
  7. Add 3-4 cup of water, some coriander, salt and remaining ghee. Wait till it comes to boil. Then pressure cook it for 3 whistle.
  8. Garnish it with some more ghee, coriander and grated coconut and serve it.
