Take 2 1/2 tbsp schezewan sauce
Provide 2 tbsp soya sauce
Get 1 tbsp vinegar

Take 1 medium zucchini
Get 1 medium sized capsicum

You need For schzewan sauce:
Get 20-25 red chilli whole
Provide 1 cup hot water
Provide 1/4 cup oil
Provide 1 tbsp ginger garlic paste
Provide 3 tbsp chopped onion
Get 1 1/2 tbsp sugar
Provide 1 tsp salt
You need 1 tbsp soya sauce
Get 1 tbsp vinegar
Provide 1/4 tsp pepper powder
Steps to make Schezwan curry:
First, we will make schzewan sauce.
Deseed the red chillies and soak it in hot water for 30 mins.
Add them in a blender and make a smooth paste. Add water if required.
Now heat oil in a pan, add ginger garlic paste. Saute them for a min. Now add onion and saute them till it becomes transparent.
Now add red chilli paste, saute and mix and add half cup is water. Add sugar, salt and pepper.
Cook until oil separates. At this point add soya sauce and vinegar.
Finally, mix well and cook for 2 mins.
Your schzewan sauce is ready, once it's cool down you can store it in jar for next 6 months.
Now we will make the schzewan curry.
Chop all the veggies (not too big not to small) and keep aside.
Now make a cornflour mixture. Mix cornflour in water and make a thin batter and keep aside.
In a bowl mix schzewan sauce, vinegar, soya sauce, sugar and oreo is ready.
Now take a wok heat 1 tbsp oil and saute red chillies for a min and then add chopped onions and saute again for 2 mins.
Once the onions are done add ginger garlic paste mix well and add all veggies, salt as per taste (remember sauces already are salted so add salt acc to veggies only).
Cover the lid for 4-5 mintues.
Now remove the lid add the sauces mixture and also 1 cup is water. Mix gently
Now add cornflour mixture and mix again.
Boil till the desired consistency.
Dish is ready, enjoy with steamed rice.
