  6. roast for 15 minutes.
  7. toss veggies with oil, salt and pepper.
  8. spray cookie sheet and put veggies on it.
  9. reduce oven heat to 350° and put veggies in.
  10. roast meat 50-60 minutes and veggies the same time, mixing every 15 minutes.
  11. place roast on cutting board and let rest 20 minutes.
  12. heat pan over medium heat, add broth and wine. simmer and reduce heat to low. add butter, salt and pepper.
  13. if veggies are done, take them out.
  14. cut roast, serve with veggies and gravy.
